Why does absorption of digested food occur mainly in the small intestine?

Answer:

Small intestine is 6m long, highly coiled, narrow tube and the longest part of the alimentary canal. It plays an important role in the absorption of the digested food due to numerous folds which increase the surface area for the absorption.

It has a finger-like projection called microvilli which is composed of blood vessels.
